Ethanol is what makes apples ripen and go bad? If you put an apple in a paper sack with a bunch of bananas, they'll ripen quicker. Putting apples in the fridge (I like mine cold!) will extend their life. If one goes bad, the ethanol lever skyrockets and will rot the other ones real fast! One bad apple will spoil the whole bunch!
Many years ago, people would pick apples in the fall, put them in barrels and submerge them in lakes and rivers through the winter. When they retrieved them in the spring, they were as ripe as when they picked them!
Pretty interesting stuff!

My folks, (ancestors) use to bury the apples in the ground, then in the middle of winter, during the holidays usually, the kids would get all excited about being sent out to dig up the apples, knowing this meant that there would be some apples pies being baked...on the ole' ancestral farm, the original root cellar is still in use...
