was hoping on a comment from her , i know she likes cake too, the wife mad a spice cake from scratch and white creamy frosting , she insisted no choco frosting
but did the whole thing well , rib eye were on sale 4.68 a lbs , dam good price, the whole prim rib was 3.99 lbs 54 for the whole piece that's a lot of steak,we settled for family pack , 6 prices cut one inch, dam good grilling season Fry's and salad, then Saturday we have country ribs and taters all cooked in ray's.... tonight we had crunchy waffles, had to meat less day i guess

Guess I got the extreme love of cake from Dad, I always stopped and bought one on my way to visit.

My Dad grew up during the depression, one of 9 siblings. There was no money for extras really but he did grow up with a love for sweets.

He told me a story once of standing on his sister's shoulders to get down the mallomars from the top shelf. His sister Mary, kept saying, "Hurry Edison, mom's coming." All the while, my dad is scarfing down the cookies and standing on her shoulders. Finally, he got so nervous he peed on her head.

Once coming home from the hospital he asked for a coconut cream pie. And, this weekend my friend brought me a piece of coconut cake made with coconut milk and coconut extract. It was great and moist!!!

cut it into 1/2" chunks,spread it out into a bowl or pan, cover it with strawberry pie filling and top it with Cool Whip and fresh sliced strawberries. yummy. or slice about a 1/2 inch off the top, hollow it out, fill it with any kind of pie filling and Cool Whip, put the top back on, frost with with more Cool Whip, and chill for a few hours, slice and enjoy!

Hmm, never heard of an angel food cake coming in a bread loaf pan before? Usually the dead give away hold a hole in the center of one. Angel food is great for a low-calorie alternative to strawberry shortcake. I usually take it and slice it across the side, making two giant sized life-rings. I buy a pint of fresh strawberries and slice them up, topping em with a cup of Splenda the sugar alternative. Leave them in the fridge for an hour or two, and the sugar substitute makes a strawberry syrup mixture. Strain out most of them and place them on the center layer, placing the other layer on top. Coat the whole thing with Cool-Whip lite and garnish the top with a few strawberries on top. Pour the syrup into the hole in the center. That soaks up in the angel food without making it a soupy mess. One slice will yield you about 85 calories (1/8th slice).

My dad had a piece the other day. He put it back with the rest of the cake, with an indiscriminate piece missing. He couldn't put his finger on it, but there was something very wrong with that cake, or so he said...

I have a family member who is a size 0 and one of the few things she does eat that is "sweet" are her version of "sweet and yummy" are her brownies. She tried to convince me that "her version" of low fat, low sugar, low cholesterol brownies taste exactly the same as the regular ones I make. I tried them. They looked good and even smelled good. As for taste, all I can say is I think she has no taste buds.

EARTHQUAKE CAKE

1 German chocolate cake
1 c coconut
1 c chopped walnuts
1/2 c melted butter
2 (8oz) cream cheese
4 c powdered sugar
2 T cocoa
6 T Coca-Cola
1/2 c butter

Prepare cake as directed. Spread coconut and nuts evenly in greased pain 9 x 13 x 2 bake pan. Pour cake mix over nuts and coconut. Combine melted butter, cream cheese and 2 cups 4X sugar. Beat until smooth, drop by spoonful over cake, mix swirl through cake mix. Bake 350' 45 to 50 minutes.

Frosting;
Combine Coca-Cola, 1/2 c butter in saucepan, boil, stirring constantly. Remove from heat. Pour over 2 cups of 4X sugar. Beat until smooth, spread over cake.

Mounds Brownies

1 box Super 1 Family Size (9x13) pan of brownies, prepared
5 1/3 Cups shredded, unsweetened coconut
14oz Can sweetened condensed milk
1 1/2 Cups powdered sugar

Prepare brownies according to the directions for cake like brownies on the box. Let cool completely.

In the bowl of your mixer combine unsweetened coconut, sweetened condensed milk, and powdered sugar until all ingredients are incorporated. Spread coconut mixture over cooled brownies. Next make your Ganache.

Chocolate Ganache frosting

1/2 cup heavy cream
4 oz semi-sweet baking chocolate-chopped

Heat heavy cream on stove top but do not allow to boil. Place chopped semi sweet chocolate in small bowl and pour hot cream over chocolate, mix well. Pour chocolate mixture over coconut topped brownies. Allow to cool before cutting.

Note: Make sure you use UNSWEETENED coconut.

Yummy!! Chocolate & Banana! A favorite!

Ingredients

18 whole graham crackers (5x2" ) divided
3/4 cup semi-sweet chocolate morsels
1 container (12 oz) frozen whipped topping, thawed and divided
1 pkg (3.4 oz) banana cream instant pudding
1 cup milk
1 lemon or 2 tbsp lemon juice
4 large bananas

Directions
(1.) Finely chop half of graham cracker and set aside. Coarsely crumble remaining crackers.
(2.) For ganache, place chocolate morsels and 1.5 cups of whipped topping in bowl and microwave on high for 45-60 seconds or until melted and smooth, stirring every 15 seconds. Combine pudding mix with milk and whisk until mixture begins to thicken. Fold in remaining whipped topping and set aside.
(3.) Juice lemon or measure 2 tbsp. juice. Peel bananas and cut into 1.5" slices, add lemon juice and toss gently to coat. Set aside 12 slices for garnish.
(4.) To assemble trifle, place half of the crumbled graham crackers over bottom of clear bowl. Place half of the bananas over the crackers, arranging some of the bananas against the sides of bowl and top with 1/3 of the ganache. (To get a good visual of the ganache layers, spoon ganache into resealable plastic food storage bag; secure with a chip clip. Trim corner of bag to allow ganache to flow through. Pipe around the inside edges of the bowl, then drizzle remaining ganache over the bananas.). Spread half the banana filling over ganache, spreading to edges. Repeat layers one time. Decorate with remaining ganache. Sprinkle top of trifle with chopped graham cracker.

Arrange reserved banana slices around the edges of the trifle.

... INGREDIENTS

1 package regular Oreo cookies (Not Double Stuff) - about 36 cookies
6 Tablespoon butter, melted
1- 8 ounce package cream cheese, softened
1/4 cup sugar
2 Tablespoons cold milk
1- 12 ounce tub Cool Whip, divided
2 - 3.9 ounce packages Chocolate Instant Pudding.
3 1/4 cups cold milk
1 and 1/2 cups mini chocolate chips

DIRECTIONS

Begin by crushing 36 Oreo cookies. I used my food processor for this, but you could also place them in a large ziplock bag and crush them with a rolling pin. When the Oreos have turned into fine crumbs, you are done.
Transfer the Oreo crumbs to a large bowl. Stir in 6 tablespoons melted butter and use a fork to incorporate the butter into the cookie crumbs. When the butter is distributed, transfer the mixture to a 9 x 13 inch baking dish. Press the crumbs into the bottom of the pan. Place the pan in the refrigerator while you work on the additional layers.
Mix the cream cheese with a mixer until light and fluffy. Add in 2 Tablespoons of milk, and sugar, and mix well. Stir in 1 and 1/4 cups Cool Whip. Spread this mixture over the crust.
In a bowl, combine chocolate instant pudding with 3 and 1/4 cups cold milk. Whisk for several minutes until the pudding starts to thicken. Use a spatula to spread the mixture over the previous cream cheese layer. Allow the dessert to rest for about 5 minutes so that the pudding can firm up further.
Spread the remaining Cool Whip over the top. Sprinkle mini chocolate chips evenly over the top. Place in the freezer for 1 hour, or the refrigerator for 4 hours before serving.

1 box cake mix (18.25 oz) in any flavor
1 pint ice cream, melted
3 eggs
Glaze:
1/4 cup milk
2 cups powdered sugar
1 tsp vanilla
How to Make

Cake
Preheat oven to 350
Grease cake pan liberally with cooking spray or butter and flour.
Mix the cake mix, eggs and ice cream together and beat for 2 minutes on medium speed.
Follow box for baking times. Time will vary based on type of pan you use.
Let cool and remove from pan.
Allow to cool on wire rack.
Glaze:
In medium saucepan combine ingredients with a whisk over low heat.
Stir until glaze is smooth.
Pour over cake.
Notes

**I have had mixed feedback on this recipe. All I can say is that I have made it numerous times and it turns out perfect. Make sure your ice cream isn't still frozen, because if it's still cold your batter will be cold and your cake will not cook all the way through.
