Favorite Holiday Recipe
Bourbon Mashed Sweet Potatoes

Ingredients
1 pound sweet potatoes
2 tablespoons butter, room temperature
2 tablespoons brown sugar, (optional)
1/4 cup light or heavy cream, room temperature
1/4 cup good-quality bourbon
Salt and pepper
3 tablespoons snipped chives, for garnish

Instructions
Prick the sweet potatoes several times with a fork and roast at 350 degrees for 45 minutes or until tender. Remove the potatoes from the oven and cool slightly. As soon as you are able, using a potholder or kitchen towel, peel the potatoes and transfer the pulp to a food processor. Process until smooth. Add the butter, sugar, cream and bourbon. Process to blend. Season to taste. If you wish, shape the sweet potatoes into quenelles before serving. Garnish with chives.

Yield: 2 servings

Egg nogg. Just made my 3rd batch in a week. Put the bottle down, so this nogg does'nt make me feel "funny", dammit! Just made Rice crispy treat's, vannila pudding, and will be making pumpkin pie in a couple days. Goodies!

Sausage, Sage, and Apple dressing

Ingredients
16-ounce bag stuffing cubes
6 tablespoons unsalted butter, plus more for greasing the pan and topping
1 pound fresh sage sausage, casing removed
1 medium onion, chopped
2 cooking apples, such as Gravenstein, Rome, or Golden Delicious, peeled, cored, and chopped
1 to 2 ribs celery with leaves, chopped
1/2 teaspoon kosher salt
3 cups chicken broth, homemade or low-sodium canned
1/4 cup chopped fresh flat-leaf parsley
1/2 cup walnut pieces, toasted (See Note)
2 eggs, beaten

2 Tbsp. Extra virgin olive oil, divided
1 c. Minced onion
1 Tbsp. Chopped garlic
1 Tbsp. Yellow squash, coarsely Diced
2 c. Roma tomatoes (unpeeled), Seeded and minced
2 c. cubed cucumber (peeled), Seeded
1 Tbsp. Minced fresh basil

Chocolate Chip Zucchini cake

Use a 9x13 inch pan. The easy method is use a chocolate cake mix, add 2 cups shredded and drain zucchini, and 12 oz of chocolate chips.

It is rich, moist, and chocolaty!

I love mashed potatoes. Could eat 'em every day, but of course you gotta have 'em on turkey day! Whay makes them really good is a little fresh garlic and a big dollop of sour cream.

Sage Mashed Potatoes

Easy
1. Cut 3 lbs. unskinned red potatoes into large chunks and remove the leaves from 6 sprigs of fresh sage, then cook the potatoes and sage stems in a large pot of boiling salted water until the potatoes are just tender, about 20 minutes. While the potatoes cook, mince the fresh sage leaves.

2. Drain the potatoes, return them to the pot, mash them coarsely, and set aside. Add the boiled sage stems and minced leaves to a medium saucepan along with 2 cups half-and-half, 12 tbsp. unsalted butter, and 8 cloves minced garlic and heat the mixture over medium heat just until it begins to boil; immediately remove from heat and allow to steep for 30 minutes.

3. Strain the mixture, pour it into the pot containing the mashed potatoes, season with salt and pepper, and stir until smooth.

4. Before serving, garnish the mashed potatoes with more chopped fresh sage leaves to add an herbal kick.

Brussel Sprouts and Bacon

Ingredients
12 oz. slab bacon, cut into matchsticks
1 tbsp. olive oil
2 tbsp. unsalted butter
2 lb. Brussels sprouts, trimmed and halved lengthwise
Kosher salt and freshly ground black pepper, to taste


Instructions
1. Heat slab bacon and olive oil in a heavy skillet over medium-high heat. Cook, stirring occasionally, until bacon is crisp and fat is rendered, about 15 minutes. Using a slotted spoon, transfer bacon to paper towels to drain, and pour off all but 2 tbsp. bacon drippings.

2. Return skillet to heat and add butter. Add Brussels sprouts and cook, stirring occasionally, until golden brown and caramelized, about 15 minutes. Season with salt and pepper and serve garnished with reserved bacon.

Turkey Soup

Made with turkey bones, leftover stuffing, and leftover gravy.



MAKES 10 CUPS


INGREDIENTS
1 turkey carcass, broken into pieces
2 1/2 cups leftover turkey stuffing
2 cups turkey gravy
3 carrots, peeled and thickly sliced
3 ribs celery with leaves, sliced
1 onion, chopped
1/2 cup chopped fresh parsley
1 bay leaf
2 tsp. dried thyme, crumbled
Salt to taste


INSTRUCTIONS
Put all the ingredients with 10 cups the water into a large soup pot over medium heat, bring to a boil, and then reduce the heat to a simmer. Stir to break up all the clumps of stuffing and mix well. Let the soup simmer for about 1 1⁄2 hours. Add another 1 1⁄2 cups of cold water and let simmer for 10 more minutes. Taste for salt and adjust the flavoring if necessary. Serve hot.

Stuffing Dumpling soup

Ingredients
1 cup sliced fresh mushrooms
1 medium onion, chopped
1 tablespoon olive oil
3 garlic cloves, minced
4 cups reduced-sodium chicken broth
1-1/2 cups chopped fresh carrots
2 teaspoons Creole seasoning
2 eggs
1/2 cup all-purpose flour
2 cups cooked stuffing
2 cups cubed cooked turkey
1-1/2 cups cut fresh green beans
Directions
1. In a Dutch oven, saute mushrooms and onion in oil until tender. Add garlic; cook 1 minute longer. Add the broth, carrots and Creole seasoning. Bring to a boil. Reduce heat; simmer, uncovered for 5-8 minutes or until carrots are tender.
2. Meanwhile, in a large bowl, whisk eggs and flour until smooth. Crumble stuffing over mixture; mix well. If necessary, add water, 1 teaspoon a time, until mixture holds its shape.
3. Add the turkey and green beans; return to a boil. Drop stuffing mixture by heaping tablespoonfuls onto simmering soup. Cover and simmer for 8-10 minutes or until a toothpick inserted in a dumpling comes out clean (do not lift the cover while simmering).
Editor's Note: The following spices may be substituted for 1 teaspoon Creole seasoning: 1/4 teaspoon each salt, garlic powder and paprika; and a pinch each of dried thyme, ground cumin and cayenne pepper.

Peanut butter pie 2 large boxes vanilla instant pudding 2 deep dish pie shells 4 cups milk 1 cup peanut butter. Bake shells and let cool. When they have cooled mix pb and milk thoughly. Electric mixer works best.Combine pudding mix. Put in pie shells to set. Top with whipped cream and a drizzle of chocolate.

Ash, last year I swear I put on 5 pounds just reading all the recipes you posted.I have to put a block on your posts until after the holidays.lol I just made banana bread and strawberry bread last time I was at Kam's to have with chocolate fondue that I made for some friends that came over. YUM!
