Re-learning to cook!
Ugh...my husband's tests came back, he's cholesteral levels are just horrible!
Now it's like I have to learn to cook and shop all over again after all these years of learning to prepare all his mama's favorite recipes.
I pretty much know how to fry anything, but I'm not having much luck so far on baking the same meats.
This is gonna be difficult for me to keep him fed, he's too hungry too often, gets bored easily with meals, and he's pretty finicky too.
I have a freezer full of food, but have no idea WTF I'm gonna feed us this week! Can anybody give me simple directions on how to bake pork chops? I'm so lost...and I am so screwed!
Has anyone else had to suddenly throw out everything they've know about food and cooking and start learning it all over again?

Re: Re-learning to cook!
you can just put the chops in a baking pan and bake with pork gravy or bbq sauce but im not sure if that is right for his new diet

Re: Re-learning to cook!
plenty of chicken and veg... avoid red meats and frying anything at all, or anything fatty.
Most stuff can be grilled or ovened simply enough. As a rule wrap anything you like in tin foil with a teaspoon or two of vegetable or sunflower oil) and stick it in the oven at 200 - 220 degrees c. About 20 minutes cooks anything about the size of a chicken breast, but cut it open and make sure it's not still pink in the middle.
My dad had to change his diet when he started to have problems, the general advice the dietician gave him was "If it tastes good, spit it out"

I season my pork chops with fajita seasoning and bake them. The hard part with baking foods is not to dry it out too much. I never fry foods at home but we eat alot of vegetables, baked meats and salads. I use grapeseed oil and olive oil when cooking, they are considered the "right" for you oils. His Momma's recipe's may be out the window at this point. See if you can involve him in the selection of recipes, that way if they don't turn out great, he's more apt to eat it because he helped select it.

Re: Re-learning to cook!
Well that is a problem that is hard to overcome. I have struggled with high blood pressure and had to change my diet. As a southern man, fried foods are a part of me and it was hard to be creative, but with time I found many ways to change that without starving. Fish is good for the diet, if you can bbq that is far better than cooking in the oven. Food is less likely to dry out and the taste is sooooo much better. Also steaming the veggies is better than boiling. There are plenty of ways to enjoy the foods that you like without sacrificing too much.

Re: Re-learning to cook!
weight watchers has an amazing cookbook that has wonderful recipes. Just to help, don't try changing his favorite dishes into healthy. They will never taste the same and you will get discouraged with his complaining. Try new things that he won't have any idea is cooked healthy.

Re: Re-learning to cook!
Chop some bell peppers, tomatoes, zuchhini, onions into a suacepan. Add about a cup of v-8 or other tomato based juice., stir fry until all liquid gone. place this mixture onto the chops into a aluminum foil tent and sprinkle oregano, pepper, thyme and basil on top bake at 350 for about 40 minutes, serve with a side of broccloi steamed with orange juice and a couple of slice of flaxseed bread toasted and spread with apple jelly. Very low cholesteral, with cholesteral and blood pressure fighting antioxidents not to mention tasty tasty.

Re: Re-learning to cook!
Geez,...I guess it's real hard to change someone else's diet when they don't really want to change, or just not ready to change yet.
I started changing my diet a couple of weeks ago, I just got fed up with bad habits, made the committment and changed...it's not hurting me at all but the husband is acting like a little boy whining for pizza, drinking soda with every meal and inbetween.
Doesn't seem to matter what I cook and put out for a meal, he might eat it...might not...doesn't matter...he'll still want his pizza, burritos and soda too.
Guess I'll have to call his mamma...she's a much better nag than I am!

Was very ill early part of last year and have been diagnosed with irritable bowel of the upper gut, my upper gut goes into spasm and I'm doubled up in agony, its not fun. So, the specialist advised me to cut out: wheat, fat and anything acidic, My diet has changed beyond belief and I have dropped 2 dress sizes, but it is hard chazzy and I have found that taking it day by day is the easiest thing, I live on jacket potatoes, fish and vegetables. I wish you all the luck in the world, it'll take you a while, but you'll get there in the end.
Try vegetarian cheese, its much healthier and even tastes quite nice.
